described here is a little more sophisticated but basically the same tra- ditional technique. Tis recipe has a rich, zesty flavor and the prepara- tion is free of unhealthy fats. Experiment a little with stronger chilies, different flavored oils and the variety of fish. You will be well on your way to creating your own backyard classic.


4 rainbow trout fillets (4 to 6 ounces each)


1/4 cup olive oil 2 tablespoons soy sauce


2 tablespoons balsamic vinegar


2 tablespoons chopped green onions


1 1/2 teaspoons brown sugar


1 clove garlic, minced


1/2 teaspoon chili pepper flakes 1/2 teaspoon sesame oil 1/8 teaspoon salt


1. Marinade: Mix all the ingredients except fish in a bowl and stir well. Coat the fillets on both sides, and then lay them out in a shallow glass dish. Pour the remaining marinade over the fish and store in the fridge for a minimum of six hours (overnight is best) so the flavor is absorbed.


2. Plank Prep: Planks are simple to make—use an axe to chop them from cedar. Planks should be less than three quarters of an inch thick and wide enough for the fillet. Soak them in a bucket of water over- night. Planks are also commercially available.


3. Cook: Preheat grill to medium and place the planks on the grill. Im- mediately set the fillets on the planks skin-side-down and close the lid. Tat way, removal aſter cooking is hassle-free—the skin sticks to the plank but the meat comes off easily. Te fish is cooked when it flakes with a fork, in roughly 10 minutes.


     
