welcome stimulus to the arduous hill climb! There followed a logical


progression to providing food, at first of the tradi­ tional “ ham and egs, farm­ house teas" variety: and, under Mr Trueman's aegis, to high cuisine.


Many of his staff have


been with him for quite a few years. His manager, Mr Peter Spencer, has been at the Spread Eagle for the past 10 years and has played a large part in the design and running of the chang­ ing establishment. The assistant manager. Mr Ian Tingle, has worked his wav- through various depart­ ments of the hotel in the past eight years, and both Mrs Spencer and Mrs Tinsrlc actively assist in the business.


The kitchen has a brigade


of keen young workers led by Mr Barry Chamley, who started at the hotel as a Junior Commis Chef; with another native of Clith croe area. Mr Jeremy Williams, who also joined from school and is now in charge of the dining room. Many of the dining room staff, with several years service, add the final touch


of the “ friendly, lannliu.- face” which, together with a dependable team spirit, helps to create the happy atmosphere which is so apparent when one sets foot inside the Spread Eagle.
