W OM A N ’S WORLD NOT ENOUGH HOURS IN A DAY
JOINING the Women’s Royal Voluntary Service is a worthwhile way of passing a few spare hours, but the o rganiser of the Clitheroe c entre, Mrs. Nancy Steiger,
often wishes that there were more hours in a day. The WRVS is a voluntary
organisation in the true sense of the'word. The cen-
tires throughout the country are run strictly as services,
and not societies, which means that they are not allowed to raise money for their work. They are partly financed by the Home Office, but have to rely on dona tions for any extra activities, especially at Christmas.

SOUFFLES are considered to be difficult to make and so they are guaranteed to bring compliments to the cook when one is served. A cold souffle can be made in advance when the house is quiet and the secret is to read the recipe carefully and to have all the ingredients to hand. Chocolate souffle with cry- stalised ginger is simple in i ts preparation. You will need: 4 oz. of plain
chocolate, 1 pint of milk, 3 eggs, 2 oz. of caster sugar, A

oz. of gelatine and -A pint of double dairy cream. For decoration you will
need: 1 oz. of plain chocolate, grated, and a few pieces of. crystallised ginger.
