STICKY POMEGRANATE CHICKEN WINGS COMPLETE BBQ MADE EASY BY DEAN EDWARDS


I tried a dish like this in an incredible Persian restaurant that is local to me. What I loved most was that they took so much care and attention over the food. It was lovingly prepared and, more importantly, all the meat was cooked over charcoal, which gave it an incredible flavour profile. These wings were a standout, so I decided I needed to try to replicate the flavours at home.


INGREDIENTS - SERVES 4 l


12 chicken wings, tips removed (see tip) l 1 tablespoon dried oregano


l 1 heaped teaspoon ground cumin l 1 teaspoon ground turmeric l 1 teaspoon sweet paprika l 1 teaspoon garlic granules l 1 teaspoon sea salt


l 80g (23/4oz) Greek yoghurt l pomegranate seeds, to garnish


l chopped fresh coriander (cilantro), to garnish 82 METHOD


Place the chicken wings into a bowl, along with the oregano, spices, garlic granules, salt and yoghurt. Give it a good mix until the ingredients are fully combined. Cover, then pop into the fridge overnight or for at least 2 hours.


When you’re ready to cook, thread the wings onto long flat skewers.


Set up the BBQ for direct cooking over the grill – get your coals nice and hot.


Place the wings onto the BBQ to cook suspended directly over the charcoal, turning occasionally. This will take around 12–14 minutes.


Make sure the wings reach an internal temperature of at least 75°C (170°F).


For the glaze, combine the rose harissa, molasses, honey or maple syrup and soy in a small bowl, then brush most of it onto the wings during the last 5 minutes of cooking.


Garnish with some pomegranate seeds and coriander and brush over the remaining glaze.

Don’t throw away the wingtips once they’ve been removed. Place them in a freezer bag and keep for the next time you’re making a roast dinner. If you pop them into the roasting tin, they make the most incredible gravy.

l 1 tablespoon rose harissa paste


l 2 tablespoons pomegranate molasses l 1 tablespoon honey or maple syrup l 1 tablespoon dark soy sauce
