BAKED AVOCADO WITH BLUE CHEESE AND WALNUTS This tasty recipe makes an ideal starter or light lunch.


METHOD


1. Cut avocados in half and remove the stones. Using a large spoon, carefully scoop each half of the avocado out of its skin and place on a baking dish.


INGREDIENTS (SERVES 2)


 2 large avocados  50g Walnut pieces  100g blue cheese crumbled (vegan cheese can be substituted if you prefer)


 4 tablespoons of double cream  Black pepper


2. In a small mixing bowl combine walnut pieces, crumbled cheese, double cream and black pepper and mix well.


3. Fill each avocado with the cheese mixture and bake in a hot oven (200 degrees Celsius or gas mark 6) for about 12 minutes.


4. Serve with crusty bread and salad garnish.
