One of the coolest concept restaurants I’ve been to in a long time, Water
Brewery is the perfect place to gear up for Orange County Pride’s week-long events. Co-founders and owners, Einar and Wennifer Haver, together have created a sanctuary for those in search of ultra-healthy food and drink, uniquely billed as the heart of water and wellness, featuring a biodynamic kitchen and elixir bar specializing in superfood supplements and eco-living goods.
Einar C. Haver is a noted and visionary water brewer, wellness coach, emissary for MotherEarth and is lovingly referred to as The Water Brewery’s in-house “Water Wizard.” Cofounder Wennifer Lin-Haver, PhD, is also the founder of The Mother Tree Sanctuary, a collective with the purposes of supporting women and children. The two came up with an extraordinary technique for purifying water to its highest level and have “brewed” the ideal elixir: Aquae A.M.O.R.E. (Alkan- ized, Mineralized, Oxeginated, Restructured, Energized). Their water cleansing technique offers ultra-pure, deeply nourishing, vibrationally cleansed, and structurally beautiful H2O, that issued in all their foods, drinks and is available for $2 a gallon. They’ve expanded on the purity concept by opening a
restaurant arm open until 4 p.m., Wednesday through Sunday, with a mission to provide, “Dishes lovingly handmade in-house with consciously-sourced ingredients that are certified organic, wild grown, biodynamic, non-GMO and local, though many of the ingredients come from remote areas such as the Amazon.” Their menu, though petite, is extremely thoughtful and they will be adding new items in the coming months. And, the concept within the concept, open daily until 6 p.m., is the Urban Well + Elixir Bar. Let’s talk elixirs: We ordered
Water Brewery’s Soma (mush- room antibiotic) with reishi, maitake, chaga, shitake and lion’s mane agaricus mushrooms as well as Shizandra berries, rose geranium and orange peel served over ice with hibiscus tea and lemon and the Euphoria
(spirit lifter) hibiscus, moire puma, catuaba, yohimbe, cold pressed goji berries, damiana, rose petals, shizandra berries, and night blooming jasmine stirred with sparkling water, rose honey and lime. Reasonably priced, these concoctions are truly delicious, and I swear, you can feel the healing effects immediately. Most of their menu items
have some sort of mushroom association because of Wennifer’s Taiwanese heritage, some of the recipes have been in her family for generations. Prepared by Chefs J.C. Baty and Alexa Ross, this was by far the healthiest meal I have ever had. We started with Wild Shitake Sea Broth Soup, filled with wild sea vegetables, oak-grown wild Shitake mushrooms, onion and garlic served with chives, gluten-free noodles and a side of raw seasonal greens. were their vegan tacos, we sampled the Shitake Taco, Jackfruit Taco and a Sweet Potato Taco, all offering a unique flavor profile. I would definitely indulge in again, though my favorite item was their Da Purple Salad, created by Wennifer and made popular on Hawaii’s Big Island where she grew up. The legacy recipe is a combination of purple cabbage, roasted pistachios, green onion and tangy citrus dressing, topped with avocado and hemp seeds. It was delightfully crunchy with flavor bursts in each bite! Water Brewery’s raw desserts are
prepared by Chef Violet Vandevort and we indulged in some of their “Hot Tonics.” I chose the Maca Hot Cacao (libido and stamina booster); comprised of maca, cacao and maple syrup, blended with house made nut milk. My guest went for the Chaga Tea (anti-aging and immune booster), Mystic Blends chaga mushrooms, cats claw, olive leaf and steamed coconut milk. Once again, we could literally feel the beneficial effects as we sipped our tonics. We shared two of their “Raw Desserts:” Matcha Moringa and Mushroom Mocha, and yes, even their desserts are designed to be superfoods. The crust is made with dates, nuts, coconut and sea salt and was divine. This is a one-of-a-kind establishment not to be missed!
