GINGERED LEMONADE
Serves 6-8
1cup water 1
⁄2 cup honey or agave
1-inch piece peeled ginger root 1teaspoon lemon zest Juice of 8-10 lemons to make 1cup 5cups cold water
Thinly slice the ginger root. In a small saucepan, combine 1cup of water with the honey or agave. Add ginger root, bring to a boil, reduce heat and simmer1minute. Remove the pan from the heat. Allow ginger to steep in the liquid for about an hour.
Strain the mixture, discarding the ginger root.
In a pitcher, combine the ginger syrup with lemon zest, lemon juice and cold water. Chill.
To serve, pour over ice in a tall glass.
