Blueberry Pancake Mix


Yields 1 pint jar of mix, 4 servings


½ cup all-purpose fl our


¼ cup powdered milk


½ cup white whole wheat fl our ¼ t salt


1/8 t cream of tartar 1 t baking powder ½ t cinnamon ½ cup quick oats


¼ cup dried blueber- ries


¼ cup brown sugar


Layer ingredients in a pint jar. Give pan- cake mix along with preparation instruc- tions: To a medium bowl, add 2 eggs, 1 cup of water and 1/3 cup of canola oil. Whisk in the jar of pancake mix. Preheat a griddle or frying pan to medium- high. Use ¼ cup of the mixture for each pancake.

Mint Oreo Truf- fles


Yields 4 dozen truffl es


1 package mint oreo cookies


8 ounces room- temperature cream cheese


1 package semisweet chocolate chips


4 dozen paper candy cups


Grind the oreos in a food processor or blender until fi ne crumbs are formed. In a medium bowl, mix the cookie crumbs and the


cream cheese. Form the mixture into 4-dozen, 1-inch balls. Place them on a plate or small baking sheet and freeze for an hour. Line a large baking sheet with pa- per candy cups. Melt the chocolate chips in a double boiler. Remove the cookie balls from the freezer in batches, using a toothpick to dip them in the melted chocolate. Place the dipped oreo balls in the paper candy cups. Refrigerate before giving.
