Turtle Bay launches with masterclass in Caribbean cooking


Bournemouth‘s Turtle Bay is investing £900,000 in its new 3,500 sq ft restaurant, which will have 120 covers. The new venue launched on June 18 and opened to the public the next day.


To celebrate its new Citrus Building, Turtle Bay also ran a competition for a masterclass in Caribbean cooking. The winner and a friend were treated to a lesson with training and development chefs Colin Scott and


Vinodh Duraiswamy, who showed them how to marinate a variety of meats to get the best flavour, and taught them to cook Turtle Bay‘s signature dish of jerk chicken.


Turtle Bay‘s menu is inspired by beach shacks and street hawkers across the Caribbean islands, with fresh food being served from spicy roti wraps to pulled pork, curried goat and food from the jerk pit.


New general manager for Lainston House


Lainston House, an exclusive hotel near Winchester, has appointed Gaius Wyncoll as general manager.


Wyncoll brings with him over 20 years of hotel management experience, most recently having completed a 12-year tenure with Macdonald Hotels, where he was widely regarded as one of their leading food and beverage specialists. This was while working his way through the ranks to his most recent position as general manager at the Compleat Angler in Marlow. Prior to that, he spent eight years at the leading Forte Hotels Group.


Danny Pecorelli, managing director of Exclusive Hotels and Venues, commented: “Providing the highest levels of service to our guests is our number one priority, and with his vast experience and dedication to hotel management Gaius is ideally placed to lead the hotel forward. This is a hugely exciting time for Lainston House, particularly with launch of SEASON, our new on- site luxury cookery school facility this summer, and we are delighted to welcome Gaius to the helm.“


Wyncoll added: ‘‘With so many exciting developments in the pipeline at both Lainston House and across the wider group, my appointment couldn‘t have been better timed.‘‘
