Creamy Spinach Pasta


A great quick recipe for your toddler pre-school child & for all the family!


Ingredients: 500g


50g 1 1


dried pasta (any you fancy)


coarse, fresh white breadcrumbs zest of a lemon


big clove of garlic finely chopped


200ml tub half-fat crème fraiche Handful chopped curly parsley 225g


Method: Preheat the grill to medium.


Cook the pasta according to packet instructions. Drain and return to the pan.


Meanwhile, spread the breadcrumbs on a baking tray and grill for 2-3 minutes, stirring halfway, until toasted.


Tip into a bowl and cool slightly then mix with the lemon zest, garlic and parsley. Season and set aside.


Stir the spinach and crème fraiche into the hot pasta until the spinach has wilted. Depending on how tender the spinach is, you may want to cook it a little first and then mix with the crème fraiche and pasta.


Then, stir in half the breadcrumbs, season to taste and divide between bowls. Sprinkle with the remaining breadcrumbs to serve.


Plain Fruit Jelly (vegetarian)


Ingredients: 500-750ml sweet fruit juice e.g. pineapple and mango 2 heaped tsp agar agar powder (A vegetarian alternative to gelatine) Soya cream or topping of your choice


Method:


Heat fruit juice until boiling. Add agar agar and allow to cook for 2-3 mins. Pour into a jelly mould and allow to set in the fridge overnight. Serve with soya cream.

Pizza Whirls


This recipe is a family favourite. They can be made for birthday parties, buffets, picnics, whenever! Everyone seems to like them (or maybe they’re just being polite!) Great recipe for your toddler, pre-school child to help make.


Ingredients:


2 packets of pizza base mix Tomato puree Mixed herbs Toppings of your choice Grated cheese


Method:


Make up the pizza base mix (or use half a small packet of bread mix) to make a firm dough which is not sticky, or make a bread dough using around 250g of flour.


Knead & leave to rise for around 30-60 minutes.


Roll out onto a floured board until you have a rectangle of around 20cm by 30cm. Spread 2-3 tbsp of tomato puree over the dough (but leaving the top and bottom 2cm free of toppings)


Sprinkle with mixed herbs and add toppings of your choice (chopped mushrooms, onion, peppers, ham, salami, sweetcorn etc.) and then top with grated cheese.


Roll the pizza up tightly (longways), to make a sort of pizza Swiss roll! Stick the outside edge down with a little water if needed.


Cut with a sharp knife into 2cm slices and place on a greased baking tray, leaving a 1-2cm gap between each one.


Leave to rise for a further 10 minutes.


Cook at 200°c/Gas 6 for around 10-15 mins, or until they are lightly browned.
