The Stellar 18’ Surf Ski (S18S) is an entry level surf ski with great top end speed from the S18R hull design, along with the stability that you have come to associate with a Stellar.


With 2 dry storage compartments, the S18S is not only a Surf Ski, but also a capable touring kayak. As a standard feature, the S18S is outfitted to accept a kick-up rudder for those who paddle in shallow areas.


The S18S also meets the specifications for the USCA Fast Sea Kayak division if you wish to race.

Dive into the history of any modern food and you’ll often find the origins fascinating. Take the humble marshmallow, for example. Marsh mallow (Althaea officinalis)—the herb, not the puffy white confection—has been used as both a food and a medicine (the plant contains a gummy substance that soothes irritated mucous membranes and dry skin) for more than 2,000 years. Ancient Egyptians were the first to use marsh mallow as a sweet, mixing it with nuts


and honey, but it wasn’t until confectioners in early 19th century France combined the plant sap with sugar and meringue that a whipped candy resembling the modern marshmallow emerged. Modernization of food production in the late 1950s is responsible for the factory- produced product—with the actual marsh mallow extract replaced by cheaper, more readily available corn starch—we know today. As the quintessential campfire snack, the s’more hogs more than its fair share of the gooey


glory that is the marshmallow. When these mouth pillows first hit food stores in the 1960s, creative cooks invented a wide variety of dishes. Fruity, simple yet surprisingly decadent, Ha- waiian salad (think pineapple) is a picnic classic that readily makes the leap to camp dessert. This variation uses all non-perishable ingredients so you can enjoy it any time.


HAWAIIAN SALAD


1 can pineapple tidbits, drained


1 can Mandarin oranges, drained


2 packets Dream Whip 1 cup cold milk


1/4 pkg instant vanilla pudding (optional)


1 cup multi-color mini marshmallows


12 maraschino cherries 1/2 cup shredded coconut


Prepare the Dream Whip according to the package in- structions—bring along a small whisk for best results. If you’re using rehydrated powdered milk, mix it up an hour or so before you’ll need it. This gives the milk time to regain a nice, creamy flavor; use it too soon and it will be chalky and lumpy. Adding pudding mix to the whip gives the salad a firmer texture and sweetens it a little. Pour in a splash of the fruit juices for flavor. Toss in the fruit, coconut and marshmallows. Chilling for an hour before serving will give the ‘mallows time to soften, but hotter climates might require you serve immediately. Chef Vince Paquot believes there’s always room for dessert.
