This ceramic baking tray is a must. Line with puff pastry and fill with some blanched broccoli florets and dot with some crumbled goats’ cheese. Whisk 150ml double cream with two eggs and some seasoning and pour over. Bake on the floor of the roasting oven until set and golden. Use on the runners at the top of the oven to bake field mush- rooms spread with garlic butter and parsley.
