Through her dedication to the farmers markets, Cathy succeeded in
increasing her clientele. Customers frequented the Williamsburg farmers market
with insulated bags “to get their fix,” she says. This July she turned a former
dog groomer’s shop into her own commercial kitchen. The family would come
back from the farmers markets on the weekends to renovate the future shop.
“After being in business for three years I went back to the first step by investing
the money in a commercial kitchen of my own,” she observed, “but it has been
a really great decision.”
Currently the chocolatier does three farmers markets a week: Williamsburg
and Lakeside (in season) and the Byrd House. She also sells to the Lewis Ginter
Botanical Garden, and makes a port truffle and bark exclusive to Emerson’s
wine and cheese. She is planning one of her frequent tastings, this time of
passion fruit truffles, and a busy, yet prosperous, Valentine’s season of truffles
and molds. V
