MENU TRENDS: CHEESE CHEESE STILL LOVED

• Cheese is a ubiquitous ingredient which is loved/ liked by 79% of the general US population according to Datassential FLAVOR database. Cheddar and mozzarella being the most loved/liked varieties among many demographics.


• Health and wellness trends are bleeding over to how operators are menuing cheese. Animal welfare claims including rBST free, grass fed, and antibiotic free are more common on packaged product, while restaurants are more likely to mention lifestyle diets. Diets such as vegetarian is paired with 19% of menus that offer cheese, while vegan has a lower penetration but has experienced 108% increase on menus as consumers look for dairy alternatives.


• According to Datassential Haiku, the term cheese is projected to grow 0.3% in the next 4 years, but a trending variety like burrata is predicted to grow 29%.


• Varieties of blue cheese such as cave aged blue cheese, also known as Roquefort, takes artisanal cheese to the next level. Manufacturer's are using ancient techniques to create a sharp, tangy flavor with the recognizable blue veins throughout the cheese. These unique varieties of blue cheese can be found on many dishes including charcuterie boards, pizza, and burgers.


• Creamy, fresh Italian cow's milk cheese like burrata not only gives a luxurious texture to dishes but can be used as an egg substitute on vegetarian dishes.


• Hispanic style cheeses (Oaxaca, cotija, and chihuahua) are among the top trending cheese varieties as operators are looking not just for more

• As consumers look for an alternative to traditional dairy based cheese, vegan cheese has experienced the fastest growth of all cheese varieties. New retail options go beyond traditional soy based vegan cheese and have begun to create nut-based cheese with new texture like mozzarella, brie, and cream cheese.
