• Cheeseboards continue to be trendy on multiple social media platforms. Not only are there whole accounts outlining how to create boards, but they are becoming acceptable dinner fodder (“Eat Cheeseboards for Dinner”- newer slogan from Cypress Grove, cheesemakers). At retail, there are multiple considerations around prepared cheeseboards that can make them a challenge to execute- the board itself, varying perishable timing, labor, size versus shelf, et al. To these ends, the concept set up a grab and go style cheese and cheese accompaniments in a round coffin style case that was chilled on one side and open shelf
for dry goods and some board options on the opposite side. There was room for a demo cart table so that area had the option to be fully staffed but signage and merchandising would suffice without as well. The coffin was merchandised with various sized pieces of cheese next to accompaniments that would complement as well as organized by flavor intensity across the case generally. Customers could pick out at board and then shop for everything they would need to full the board without any additional assistance.
