oining the team at Dart Marina is like a dream come true” says new Head Chef at Dart Marina With his roots firmly in Devon, Peter Alcroft feels like he has landed on his feet with a new position as Head Chef at Dart Marina Hotel & Spa. Peter grew up in and around South Devon and his earliest memories are of watching the shoals of mackerel at Bayard’s Cove in Dartmouth. “Landing the job at Dart Marina really is a dream position for me. The Hotel has undergone some


amazing changes just recently so I have joined as the new River Restaurant is in full swing, the new Britannia Rooms are completed and the riverside garden is blossoming! There is a great feeling amongst the team and we are heading into a busy summer so my new position could not have come at a better time,” said Peter. Three words sum up Peter’s food values – provenance,


flavour and simplicity. In his career as a chef, Peter has worked at The Ritz and The Dorchester but his year working with Raymond Blanc at Le Petit Blanc is one that stands out. “Working with Raymond Blanc is like working with no other chef. I left Le Petit Blanc a much better chef – and it is a year which was hugely important in my culinary career.” Peter has already created the

first of his new seasonal menus for The River Restaurant at Dart Marina which illustrate his love of local flavours; Double Baked Sharpham Brie Soufflé with Vanilla Pear salad, Trio of Blackawton Lamb with Pea & Chorizo Fricasse, Apple Crumble Cheesecake and Blackcurrant Sorbet – plus Carpaccio of Fillet Beef, Beetroot cured Salmon, Tian of Brixham Crab and Potted Sea Trout. He lets each ingredient shine through on the plate but is “not afraid to use a bold spice if I think the plate begs for it”. “One thing is for certain, food has come a long way in the last 20 years and it’s a real pleasure for me to be starting the next stage of my career, with a brilliant team, in Devon which has the best produce of all kinds at my fingertips” ended Peter.
