> CHILLI SAUCE
INGREDIENTS:
5 DRY RED HOT CHILLI PEPPERS
3 TABLESPOONS BOILING WATER
400G TOMATOES
4 TABLESPOONS OIL
2 ONIONS
2 CLOVES GARLIC
3 TABLESPOONS TOMATO PUREE
1 TEASPOON CARAWAY SEED
1 TEASPOON CORIANDER SEED
1½ TABLESPOONS WINE VINEGAR
1 TEASPOON SUGAR
• Squash tomato, water and chilli
peppers and keep the juice.
• Fry onion and garlic in oil and
add the squashed mix, the rest
of its juice, coriander, vinegar &
sugar.
• Cover with lid and stew for about
10 minutes.
The marinade sauce should consist of 2/3 water, 1/3 vinegar, bay leaf, and peppercorn.
