> TABASCO SAUCE
• Pour wine vinegar into a glass
bottle.
• Add any spices or herbs you
have, e.g. two or three mint
sprigs, a bit of rosemary, a sprig
of thyme, 1 green sweet chilli
pepper, 1 yellow sweet chilli
pepper, 1 teaspoon of salt.
• Cork the bottle firmly and leave
it in the sun for 40 days.
• Filter the content and pour into a
decorative bottle that can be
used for serving.
Tip: If you prefer it spicier, add 1 hot
chilli pepper and a few peppercorns.
• Deep fry testicles in hot oil. Add Tabasco sauce into
oil, but be careful as oil tends to spatter.
• Fry till skin gets golden brown or until testicles get
soft. Use strainer to take them out of the frying pan.
Bear in mind, the longer you fry them, the firmer
they get.

The marinade sauce should consist of 2/3 water, 1/3 vinegar, bay leaf, and peppercorn.
