F&B services within the hotel, including room service, are being run by restaurateurs Ed and Tom Martin of ETM Group. Tere are two bars, Burdock on the ground floor (pictured) and a ninth floor bar with rooftop terrace, which is an integral part of the Aviary restaurant. Aviary is destined to become a very popular dining space, given its location and views. And anyone familiar with the various City restaurants and bars run by ETM Group will know that they represent great quality. It is a good partnership between two brands who strive to provide excellent customer service. Designers Tonik Associates were

appointed to design Burdock’s interior. Located close to both Shoreditch and the City, they have given Burdock a combined posh and urban aesthetic. Recycled materials have been used throughout, including exposed brickwork, repurposed wood panels and naturally distressed tiling. Hints of the 1970s come through a colour palette dominated by shades of brown, copper and teal apparent in the distressed leather wall panels, industrial copper lighting, restored antique parquet flooring

and plush, lounge-style seating. A choice of high stools, relaxed low-slung armchairs or grey leather booths in the warm, relaxed bar area gives way to a mix of long banquettes and dining chairs combining dark wood, copper and creamy leather alongside concrete countertops in the café-cum-restaurant giving an air of casual comfort. Come the summer months, open terraces on the south-facing façade will be bathed in sunlight well into the evening. Aviary, the rooftop restaurant has a colour

palette of exotic, with a plumage of golds, creams and earthy browns plus colour pops of purple, orange and green, Aviary’s eye- catching design from the renowned Russell Sage Studio will help make it the place to see and be seen. Floor-to-ceiling windows on three sides flood the room with daylight and provide incredible views towards London’s trendy East villages to one side and the City’s iconic skyscrapers on the other. Te city scape is further brought into the venue through the use of marble and antique mirrors, softened by timber details which create a warmer, more intimate environment. A grand central bar with intricate brass and timber details divides the restaurant area from the bar lounge.

5Plus Architects are credited as building

conversion architects on this project. From office accommodation to hotel can sometimes be a logistical headache but here it would appear that the existing format was kind, the positioning of the external windows provided sufficient space to locate the required number or bedrooms within. On the ground floor the space has been reconfigured to house a reception, lifts, lobby and lounges, all located in the centre of the building, with two F&B offers on either end. Effectively, the hotel reception is reached by passing through an open bar and restaurant at the front of the building. Tis is an unusual configuration but it works well. It means that the bar and restaurants become more of an attraction to non-residents as they seem unconnected to the hotel operation - this gives them individual identity and helps to make them more popular. Hotel guests also have a choice; to remain within the quieter heart of the hotel or to join the buzz of a busy bar and restaurant. Te lower ground floor is being converted

into meeting rooms and events spaces, as well as a spa, which is following the design footprint of one of its sister hotels, M by Montcalm.
