County Hotel A COUPLE with a long history


in the hotel and hospitality trade have put the finishing touches to their renovation and takeover of the County hotel in Haverfordwest. The Grade II listed building


reopened for business on July 22. Managers Yvonne Mulvihill and Peter Welling have moved to Pembrokeshire from Cornwall, where they previously ran the Wellington Hotel in St Justins. The couple say that whereas the


County had been ran as a B&B, it will now be a fully operational hotel. As well as the 15 en suite rooms, there will now also be a Sunday carvery from 12pm - 4pm and, on Monday to Saturday, the restaurant will be open for lunch and evening service from 12pm - 3pm, and 6-9pm respectively. Speaking to The Herald yesterday,


Peter said that his biggest challenge in opening the hotel was marketing. He said: "Getting across that the County hotel is now open. Previously


there was no restaurant open to the public and people did not drop in for a drink in the bar. We are building this trade from scratch. "When in the B&B days there was


only one or two staff working at the County Hotel at any one time, now we have 10-15 staff on our books. This is great for the local area and local employment. In fact, we are still looking for additional staff members to join the team. We are looking for waiters, waitresses and an additional person to run the bar and reception. "Our two new chefs, Jodie and


Kyle, are doing an excellent job and will soon be putting their finishing touches to our new autumn menu. We will be adjusting our culinary offering to include food with a more winter seasonal fayre. We are already taking bookings for Christmas parties, our large separate dining room can easily sit up to 100 people." Yvonne told The Herald that she


and her partner have no kids and they love to run hotels. She said: "I wanted to move to


west Wales because it's very similar to Cornwall. I love the countryside and the people. I just absolutely love the building. Haverfordwest is a great town with lots of great shops compared to where we were before." Specialist business property

able to achieve a sale on the County Hotel and I’m confident that Peter and Yvonne will breathe new life into the property and make a success of the venture.”


Previous owner Bill McBride


decided to retire after running the hotel on Salutation Square since he bought it in 1994.
