WEST WATERFORD Premium gin on offer from Blackwater Distillery B


lackwater Distillery is in operation for just over a year, making gin the old fashioned


way, but they are already beating the big boys at their own game. Within the last 10 years the craft beer industry has exploded in this country with numerous breweries cropping up including Waterford’s Metalman Beer & the Dungarvan Brewing Company. Now it is the turn of the smaller spirit producers to take centre stage as craft gins, vodkas and whiskies make their mark. One such business is the Blackwater Distillery based in Cappoquin, which came about because the owner Peter Mulryan says he couldn’t find an Irish gin that he liked. “All the premium white spirits in this country


were being imported so we wanted to shift money from the import to the domestic market, we wanted to tackle the big imported brands.” And that is what they have done. Blackwater Distillery produces quality gin & vodka using an old style copper pot still. And from next year they hope to develop their first craft whisky. “We make gin the old fashioned way, we use


real botanicals like juniper berries, real cinnamon sticks, real green cardamom pods, so everything we use is a spice or a herb, we use oranges and lemons, this place smells like a greengrocers.


The cheap way of making gin is you get vodka and add essences and flavourings but that is not what we do here. We are only in business a little over a year but the gin is in the UK, in Germany and France. We are just about to start exporting to Canada and the United States. At a competition last year Hendricks Gin won


a bronze and we won silver so we beat one of the biggest brands in the world and that is what we are trying to do, we are trying to play against the big boys.” Peter Mulryan says it was a conscious choice


for them to establish themselves in the fertile Blackwater Valley “I think West Waterford is the new West Cork. I think we are where West Cork was 20 years ago. I think there is a very interesting story to tell here and as someone setting up a brand, West Waterford has an awful lot going for it. So it was a completely deliberate choice to come here. You’ve got local barley being grown here. We are trying to raise money to pay for the next stage which is whisky production because whisky is the long game. So we decided to just start the brand and hopefully by early next year we will have the facilities to do whisky.”

Blackwater Gin is the only gin produced in Waterford.
