English Garden adds a touch of whimsy to the table.

English Garden is a light hearted rendition of images from an English country garden. Rachel Barker takes a gentle stroll round a country estate taking inspiration from the birds, animals and landscape she finds and draws in a style that evokes the engravings of a bygone age.

Divine dressing - its not just the leaves but how they are dressed that makes a salad taste so good. Smash a clove of garlic and chop, mix in a little Dijon mustard and a good pinch of sugar, stir to a paste with cider vinegar then the olive oil, whisk briskly making a rich emulsion. Prepare salad in a roomy bowl, all the better for coating the leaves thoroughly.
