Breakfast


Loaded Breakfast Burritos Serves 4 • Nonstick cooking spray • ¼ c. diced onion • ¼ c. diced bell pepper


• Large handful of turnip greens or spinach, chopped finely


• Turkey or veggie sausage (optional)


• 4 eggs • 4 whole-wheat tortillas


• Reduced-fat shredded cheddar cheese


• 2 roma tomatoes, diced • Low-fat plain yogurt • Salsa


Coat medium skillet with cooking spray. Cook onions, peppers, greens, and sausage (if desired) over medium heat until vegetables are soſt, about 5 minutes. Take skillet off heat.


In a small bowl, whisk eggs until smooth. Add eggs to skillet and return to heat. Cook, gently stirring, until eggs are done (internal temperature should be 145° F).


Divide egg mixture evenly among the 4 tortillas. Top with cheese, tomatoes, yogurt, and salsa. Serve immediately.
