Tomato Salad with Herbs Serves 4 • 1 tbsp. olive oil • 1 tbsp. white wine vinegar • ¼ tsp. salt • ¼ tsp. black pepper • 2 tbsp. chopped fresh thyme or basil


• 1 pt. cherry, grape, or pear tomatoes, halved


In a large bowl, whisk together olive oil, vinegar, salt, pepper, and herb. Add tomatoes and mix well to coat.


Butter Bean Salad with


Olives and Feta Serves 4 • ⅓ c. bottled basil vinaigrette • 2 cans butter beans (or other white bean), drained and rinsed • ½ c. sundried tomatoes, drained and chopped • ½ c. pitted Kalamata olives, halved • ½ c. feta cheese, cubed


Mix about half the basil vinaigrette with beans. Set aside.


Combine beans, sundried tomatoes, and olives. Add remaining dressing and feta cubes. Store in the refrigerator. Salad will keep for several days.
