Spinach Salad with Raspberry Vinaigrette Serves 1


Raspberry Vinaigrette: • ¾ c. canola oil • 1 tsp. minced garlic • ⅓ to ½ c. raspberry vinegar • ¼ tsp. salt • ½ tsp. minced onion • ¼ tsp. black pepper


Salad:


• 6 oz. fresh spinach (two big handfuls)


• 2 sliced strawberries • 4–6 mandarin orange segments • 1 tbsp. chopped pecans


Whisk together Raspberry Vinaigrette ingredients.


Toss spinach with 2 tbsp. Raspberry Vinaigrette and place on a large plate. Top with the remaining ingredients. Refrigerate leſtover dressing.


Pico de Gallo Makes 2 cups • 6 roma tomatoes, diced • ½ white onion, diced • 1 jalapeño, seeded and chopped • ½ bunch cilantro, coarsely chopped • ¼ tsp. salt • Juice of ½ lime


Stir together all ingredients until evenly combined. Serve with baked corn chips or use as a topping on grilled chicken or fish, burritos, tacos, or salads.


Healthy Salad Ideas • Butter lettuce, oranges, avocado, walnuts, and light citrus dressing • Arugula, watermelon, feta, and light balsamic dressing • Shredded cabbage, carrots, green onions, and light Asian dressing • Mixed greens, pears, pecans, and light blue cheese dressing
