Caramelized Salmon with Mango Salsa Serves 4


Mango Salsa: • 1 c. chopped mango


• ¼ c. chopped red bell pepper


• 2 tbsp. chopped red onion


• ¼ c. chopped fresh cilantro


• 1 jalapeño, seeded and chopped


• 1 tsp. salt • 2 tbsp. lime juice


Caramelized Salmon: • 4 tsp. sugar • ½ tsp. salt • 1 tsp. black pepper • 4 (4-oz.) salmon fillets • 1½ tbsp. oil


Combine all Mango Salsa ingredients and refrigerate until ready to serve.


Combine sugar, salt, and black pepper. Coat salmon with mixture.


Heat oil in a sauté pan over medium-high heat. Add salmon to pan and cook until done, turning once, about 4 minutes on each side (internal temperature should be 145° F). Top with desired amount of Mango Salsa.
