Gooseberry and Mint Granita


A really easy water ice that is quick to freeze down for a refreshing dessert. Serves 4


Ingredients: • 500g gooseberries, topped & tailed • 150-200g castor sugar to taste • Bunch of fresh mint, chopped


Method: 1. Place the gooseberries in a pan with sugar and mint leaves (reserve a few leaves) and 300ml water. Simmer until the sugar is dissolved and the fruit is soft. 2. Cool slightly and then sieve to a smooth puree. Freeze until part frozen, whisk with a fork, then freeze again whisking gently once before fully frozen.


3. A granita should be crumbly and crystalised so only freeze until almost hard, then use a fork to break up the crystals and serve immediately before it melts.


Tip: Replace fruit with other berries if you wish. .
