TROPICAL COOLER


Freeze the flavored ice cubes in advance and assemble this cooling summer treat whenever the heat-index increases. To make an adult drink, add some coconut rum to the mixture.


Makes 12 8-ounce glasses 1cup sugar


1package unsweetened Berry Blue Kool-Aid


7cups water


6-ounce can frozen limeade concentrate, thawed


46-ounce can unsweetened pineapple juice, chilled 2-liter bottle ginger ale, chilled Fresh lime slices


Combine sugar, Kool-Aid, limeade concentrate and water in a large pitcher or bowl.


Ladle into ice cube trays. It will take four to five trays, depending on the size of the cubes. Place in freezer and freeze until solid.


To serve, combine pineapple juice and ginger ale.


Put blue ice cubes in a large pitcher or glasses. Slowly pour pineapple mixture over ice cubes. Garnish with fresh lime slices.
