HOPKINSWOODE ORANGE MINT


This recipe is from years past at Hopkinswoode Bed and Breakfast in Cotter. It combines the tang of citrus with the refreshing flavor of mint.


2cups sugar 21

6oranges 3lemons


Handful of mint (about 1cup), plus extra sprigs for garnish Chilled ginger ale


To make a simple syrup, boil together the water and sugar for 5 minutes until sugar dissolves.


Zest 2 oranges and 1lemon; juice oranges and lemons. Combine juices, zest and mint; pour hot syrup over the mixture. Cover and allow mixture to stand for1hour. Strain mixture; discarding solids.


To serve, fill a tall glass with crushed ice. Add 2-3 tablespoons of the syrup. Pour chilled ginger ale into the glass and serve with a mint sprig.
