The Meldreth Mixer


Those of you who were fortunate enough to sample the lemon cake after the last test pitting weekend, will be pleased to know that Gloria Willers, who made the cake, has kindly agreed to share the recipe with us.


Luscious Lemon Cake


Ingredients 115g butter


175g caster sugar 2 large eggs


175g self-raising flour Pinch of salt


Grated zest of 1 lemon 4 tablespoons milk


Strips of lemon zest to decorate


For the lemon syrup 75g icing or caster sugar Juice of 1½ large lemons


Method  Put all the cake ingredients in a large bowl and beat with an electric whisk or a wooden spoon until smooth.


 Turn into a greased and lined 1kg loaf tin and smooth the top level. Bake in a preheated oven at 180°C , Gas Mark 4 for 45 minutes.


 Remove from the oven and stand the cake, still in the tin, on a cooling tray.


 Make the lemon syrup. Heat the sugar and lemon juice gently, stirring to dissolve the sugar, until syrupy.


 Prick the warm cake all over with a fork and gently pour the syrup over the top. Leave until the cake is cold,, then turn out of the tin. Serve sprinkled with icing sugar and thin strips of lemon zest.
