FEATURE SPICE BUSINES S

Set across two fl oors, the new design by B3 Designers echoes that of a New York or Shoreditch loft space and is designed to appeal to a ‘chic clientele’. It also boasts a stylish bar offering a selection of signature cocktails. The ground fl oor has been transformed and is now described as ‘a bright, fashionable and comfortable space overlooking the hustle and bustle of Soho with a buzzing dining room and discreet back area for private parties.’ The downstairs area now features exposed brickwork and contemporary furnishings and is intended to provide a more laid-back and relaxed ambiance. Imli Street’s new menu is based on four distinct sources of inspiration. Coastal Shacks celebrates India’s vast coastline and her beach-fronts; Food Carts / Dhaba’s offers a tribute to the roadside and highway street stalls; Railway Cuisine refl ects the fact that food is a big part of rail journeys on the Subcontinent and that most railway stations are famous for their dishes; while Beyond Borders demonstrates the external infl uences that have signifi cantly contributed

to India’s continued culinary evolution. The restaurant’s eclectic food

concept has been developed by Tamarind Collection’s director of cuisine, Alfred Prasad. He said: “We have created a menu which is fun, accessible and refl ective of the multi layered diversity across India. A great deal of research has gone into it and many of the dishes deeply resonate with my own life and experiences in India’’. Following Tamarind Collection’s acquisition of Zaika of Kensington last year, the launch of Imli Street represents the next phase in the company’s strategy for brand development and expansion. Since opening nearly 20 years ago, the Collection has won numerous awards with its fl agship restaurant in London, Tamarind of Mayfair, which has the distinction of being the fi rst Indian restaurant in Europe to have been recognised with a Michelin star and remains as one of only six on the continent to hold the accolade. In 2011, Tamarind Collection launched its fi rst venture in the US, Tamarind of London in Newport Beach, California and Zaika of Kensington was recently welcomed into the Tamarind Collection as the fourth restaurant in the portfolio. n
