Waldorf Astoria Shanghai on the Bund, Pel- ham's restaurant emanates warmth, intimacy and elegance, without being overly formal. The décor is a mix between contemporary mini- malist and opulent parlor style with classical pattern carpet, crystal pendant lamps, white flax table linen sets with Christofle sliverware, comfortable sofas and thousands of American pennies adorning the ceiling. A floating glass exhibition kitchen anchors the main dining area, creating a sense of theatre and dynamism. In the New Year, Pelham’s has unveiled an

Bruno:牛油果阿拉斯加蟹肉卷,柠檬 酸奶,色拉;法式鹅肝,香梨酱,薰 衣草面包是很不错的开胃菜。而主菜 方面,和牛里脊,黄油胡萝卜泥,焦 糖洋葱和黑菌汁;百里香浓汁和龙虾 尾,芦笋龙虾烩饭,京葱,龙虾精华 值得一试。

Bruno: Our memorable mains include Wagyu Beef Tenderloin, Potato confit and espuma, Wagyu ragout, pearl onion, carrot, onion marmalade, truffle jus; Rack of Lamb, eggplant-zucchini tian, green tomato-spice bread, eggplant caviar, thyme jus and Blue Lobster tail, asparagus-lobster risotto, leek, lobster essence.

He has applied his formidable expertise and creativ- ity to modern French cooking techniques, enlivened by the freshest of seasonal ingredi- ents. The new menu puts premium, seasonal ingredients in the spotlight. Fine cuts of meat and fresh seafood are presented in innova- tive and sophisticated, yet ultimately flavorful and comforting, gourmet creations. Truffle Tortellini (RMB188+15% surcharge) has an authentic taste. Filled with fontina cheese, parmesan, truffle jus, the tortellini are served with truffles and chestnut foam. The taste is delicious. Blue Lobster tail, asparagus-lobster risotto, leek, lobster essence (RMB788+15% surcharge) is worth a try. The chef chooses the tail of Australian blue lobster which is rare and expensive. Its tasty meat is even juicier and sweet. Eaten with the asparagus-lobster risotto which absorbs the lobster essence, the taste is more flavorsome.


What is on the new menu? Bruno: We have created a simple yet modern and tasty menu for guests. It’s refreshed every three months by taking maximum advantage of the seasons. Guests basically have two choices: A La Carte or set menu. For the set menu, they enjoy a four-course meal priced at CNY688 per person and a seven-course menu at CNY1,088 per person. This exciting new menu further elevates the gastronomic experience at Pelham’s.
