Canapés:


Stilton with Poached Pears and Walnut on sticks Makes 12


150g stilton 12 walnut halves 2 firm pears, peeled 1 pint of water ½ pint ginger beer 1 cinnamon stick 4 cloves


1 tablespoon honey 1 tablespoon soft brown sugar


You will also require 12 cocktail sticks

Method 1. Place the pears in a small pan and cover with the water and ginger beer. Add the cinnamon stick, cloves and honey and bring to the boil. Simmer gently for 25 minutes. 2. Remove the pears and allow them


to cool. Remove the core and cut the pear into cubes. 3. Cut the stilton into cubes and spear onto the cocktail sticks with the pear and walnut. Arrrange on a plate and drizzle with the poached pear syrup.
