exceedingly intricate; do you have any formal education, training or experience which applies to what you do? No, I was totally new to this and had no idea how to make a cake with even basic swirls of buttercream. Now I laugh when I look back at my early attempts. I'm totally self-taught and taught myself how to create these beautiful flowers by looking at You Tube videos and practising the techniques I saw. I have never had any courses or lessons but I consider these videos a free online course for anyone who wants to work with buttercream to create floral work.


As your tagline "Where sugar and butter becomes art" suggests, your cakes are almost sculptural; what do you think accounts for this aesthetic? I do have a great passion for working with colours and drawing. I consider sugar, butter and my icing bag my unusual paint brush that I use to draw and make my edible art.

What is the best part of what you do and what do you find the most frustrating? The best part of what I do is decorating colours.

time consuming, but I really enjoy it as it gives me the chance to be creative and turn my imagination into delicious edible art.


The only thing that I dislike and find frustrating, is when part of my work is ruined accidentally or by mistake. For example, when I'm in the middle of decorating and my hand accidentally touches one of the flowers, as this means at least another added hour of work to fix the cake which is extra frustrating when the cake is almost done.


Do you have a favourite cake design? Why is it your favourite? I love all my cakes as each one of them is special to me in its own way. My favourite cakes are the floral ones as I love and have a great passion for flowers. My favourite floral cake is the
