Ingredients: 50ml Gin Mare 25ml Noilly Prat 10ml honey syrup (easy to make at home – 50/50 honey and water) 2 dashes Fee Bros Peach Bitters


Method: Add all of the ingredients to a Boston tin with a generous amount of cubed ice. Stir with a bar spoon for two minutes. Strain into a cocktail glass, garnish with a twist of lemon.

The Vegetal Essence

“This cocktail is based on the complex and mysterious French herb liqueur chartreuse,” says Goldbrick’s general manager George Wrigley. “The drink has a lovely fresh and zesty sourness from the kaffir lime leaves and coriander syrup, a silky sweet texture from the rhubarb compôte and all this is combined with the anis, liquorice and saffron notes from the green chartreuse to give a true balance of the senses.”


Ingredients: 40ml green chartreuse 25ml fresh lime juice 15ml kaffir lime leaves and coriander syrup 15ml organic egg white 1 bar spoon of rhubarb compôte 2 dashes Regans orange bitters


Method: Add all of your ingredients to a cocktail shaker and shake vigorously with no ice. This will help aerate the egg white and give the drink a nice silky texture. Add ice, shake again and double strain to a chilled coupette glass. Garnish with lime zest and anything pretty you have to hand.
