LIFESTYLE: Pink Lemonade by Gill Smith of www.gillyflowerjewellery.co.uk

There’s so much to celebrate here in the UK this summer and what better way to say “cheers” to this wonderful summer season than with a cool glass of pretty, refreshing homemade pink lemonade!

Ingredients • 4 lemons • 100g fresh raspberries • 150g caster sugar • 1L boiling water • Sparkling spring water to taste

Method 1. Wash the lemons, peel off a few long strips of zest and add to a large bowl.

2. Squeeze the lemons and add the juice to the bowl.

3. Add the sugar to the bowl. 4. Pour in the boiling water.

5. Stir well and leave to cool.

6. Bottle your lemonade syrup and keep in a cool dark place.

7. Dilute the syrup to taste with sparkling spring water in a jug.

8. Mash and strain 75g of the raspberries, and add the juice to the jug to tint the lemonade a subtle pink – add more for a deeper colour.

9. Serve with ice, fresh lemon slices and the remaining raspberries.
