A£10million hotel will soon open at London Southend Airport –intime for the Paralympic Games. The new Holiday Inn, adjacent to the Harp House Roundabout, will be complete by early August offering high quality and convenient facilities for airport passengers and staff, as well as local business users. The 129-bedroom hotel is the latest addition


to the world-famous chain’sportfolio and will also boast amagnificent, fully sound proofed rooftop restaurant. While the new hotel and restaurant facility


will take air travel at London Southend Airport into the future, as the number of passengers grow,plans have been put in place to reflect the area’saviation history. The restaurant itself has already been called


the 1935 Rooftop Restaurant and Bar,which is the year the airport opened as amunicipal airport for the public. The hotel’sgeneral manager,Steve Brazil,


said: "Wewerelooking to reflect the heritage of the airport in various ways throughout the hotel and this is the first of several homages we will be making to the town’saviation history." The restaurant, which will have stunning panoramic views of the airport and will also


have an exclusive dining area, will be open for breakfast, dinner and Sunday lunch and will be run by Head Chef, Kieran Moore. The 49-year-old father of three from Benfleet brings both Michelin and international experi- ence to Southend having completed his train- ing under Marco PierreWhite at the Michelin- starred Harvey’s. He has also worked at The Savoy,cooked at restaurants all over the world including the USA, Australia, Middle East and Asia, and was akey member of the team opening all seven restaurants at Disneyland Paris. Kieran said: "I am absolutely delighted to be taking up the role of Head Chef at the new London Southend Airport Holiday Inn –it’s really exciting to bring all the experience I gained from my travels around the globe back home to Essex. "I am really looking forwardtocreating a


creative and exciting menu, using as many local, seasonal ingredients from suppliers here in Essex as possible. Iampassionate about showcasing what fantastic things the county has to offer in order to create amemorable dining experience full of new textures and flavours." Kieran added: "My aim is that the 1935 Rooftop Restaurant and Bar will become a
