You will need: • 4 Mini Mission Deli Wraps*


• 2 skinless white fi sh fi llets such as cod, haddock or pollock (about 300g total weight)


• 50g plain fl our • 2 medium eggs, lightly beaten • 100g fresh breadcrumbs • 25g butter • 2 tbsp olive oil for the tomato salsa • 200g plum or cherry tomatoes • 1 tsp balsamic vinegar • 1 tbsp olive oil


• Small handful basil leaves, large leaves roughly torn lime wedges


* This recipe is equally as tasty when using the larger Deli Wraps

MISSION DELI WRAPS Breaded Fish Goujons with Tomato Salsa


The perfect recipe for any budding mini chefs out there. White fi sh is the ultimate ‘brain food’, with its high levels of omega-3, so why not get in the kitchen with your little ones and have some fun making these homemade fi sh goujon wraps?


Serves 2, Prep 20 minutes, Cook 10 minutes How to Make:


1. Start by making the tomato salsa. Roughly chop the tomatoes and mix together with the balsamic vinegar, olive oil, basil leaves, some seasoning and a squeeze of lime.


2. Cut the fi sh fi llets in half across the width and then cut each half into two equal-sized fi ngers.


3. Sift the fl our into a shallow bowl, lightly beat the eggs in another bowl and tip the breadcrumbs into a third. First dust the fi sh pieces in the fl our, then dip them in the beaten egg and fi nally in the breadcrumbs so they are evenly coated.


4. To shallow fry, melt the butter with the olive oil in a large frying pan on a medium to high heat. Fry the fi sh goujons for 3-4 minutes on each side or until crisp, golden and cooked through. Drain well on kitchen paper.


5. Place a spoonful of the tomato salsa onto each Deli Wrap, divide the fi sh goujons and fold or roll to enclose the fi lling. Enjoy!
