daughter and Iate one of the best meals we have had in a
long time here and this iswhy. To
start, Ihad the
Carmarthenshire ham and melon with the tiniest drizzle ofamustard
dressing.Thehamwasvery fine–a Welsh Serrano and complemented perfectlybythe melon slices and sprigs of cress giving an earthyfin- ish. My partner’s roasted tomato soup wasgood and straightfor- ward. There wasnothing to obscure the sweetness of the toma- toes and the understated roasted flavour whichwas finished perfect- ly withadash of cream. Mydaughter’s pizza waspresent-
ed on asliver of blackslate, the pizzawassimilarly thin, crispyand delicatelysmeared with atomato sauce and asuitably cheesyand herbytopping. Myshoulder oflamb, stuffed with

The fish wasperfectlycooked, orange and moist, butnot quite as delightful as its accompaniment. The cockles, prawns, spinachand fennel were astounding in their velvety butter sauce. Fordessert, my Bara Brith par-
fait wasjust that–perfect. It had the richspiced flavour of the famed Welsh tea bread, butinaluscious creamed, iced
slice.Partnered with ashot glass of thickcream and a smear of marmalade, itwas just
gorgeous.Mypartner’s apricot tart wassimilarly sublime, with moist
