cOLUmNS Blueberry Jubilee Cupcakes!


Celebrate in style with Honeybunch’s signature Blueberry and White Chocolate Cupcake… ideal for sharing on the big day!


Ingredients 6 oz of Butter 6 oz of caster sugar 3 large eggs 6oz of self-raising flour 1 tsp. of really good vanilla extract 36 large blueberries 24 blueberries for decoration 12 fresh raspberries


Method:


1 Mix together sugar and butter (creaming) until the mixture is light and fluffy;


2 Beat in eggs one at a time (beat eggs first it helps them incorporate!)


3 Sieve flour into mixture and just gently turn over until flour is mixed in;


4 Add vanilla and scoop into 12 Silver Cupcake cases; 5 Allow three large blueberries per sponge and push them into the centre of the mixture ( but so you can still see them)


6 Bake in a warm over at 150c gas 3 for 18 mins (check them at 18 minutes but the may want a bit more)


7 Allow to cool; 8 Use a mixer to mix 10oz of butter with 10 oz of icing sugar (can be done by hand and you will certainly tone up your arm muscles!)


9 Melt 2oz of white chocolate in a microwave or in a bowl above simmering water;


10 When cool mix into buttercream and pipe on the cooled cupcakes;


11 Decorate with two blueberries and one raspberry for a red white and blue effect!!!!

l It must be because it’s spring, but I’m still knee deep in babies! Check out this little cutie from my recent photo shoot with boutique babywear specialists The Flower Stork – www.theflowerstork. com. They make the sweetest range of new born gifts including bouquets made from rolled up sleep suits, angel ‘cakes’ adorned with paper flowers and even baby sock cupcakes! Our models were plump, cuddly and totally adorable and I spent an enjoyable couple of mornings with them rolling around on the floor like a fool with my camera. Wedding photography season is due to start but I’m keen to squeeze in a few more baby shoots around all the other celebrations so please do get in touch if you have a little person who needs photographing!
