This Mother’s Day Treat Your Mom
Being a mother is a 24/7/365 job and while it should be recognized year-round, we have one special day reserved just for her—Mother’s Day! Why not let her put those feet up and relax, while you prepare a ‘to die for’ breakfast to say thanks.
Tough you could bake your own banana bread for the base, we recommend picking up a loaf of our favourite—food-reporter Erin Ireland’s It’s To Die For Banana Bread—available at the following locations: • Commune Café (1002 Seymour Street) • Milano Coffee Roasters (156 West 8th Avenue, 36 Powell Street) • Ethical Bean (1315 Kootenay Street) It’s the perfect mix of sweet and salty, made with salted macadamia nuts, Callebaut milk chocolate and olive oil.
Banana Bread French Toast (makes about 12 slices)
1 loaf of banana bread 6 large eggs 1 cup heavy cream 2 tsp pure vanilla extract ½ tsp cinnamon butter for the pan
Slice banana bread to desired thickness. Heat a griddle or large skil- let over medium
heat and brush lightly with butter. Combine eggs, cream, vanilla and cinnamon in a bowl, whisking until mixed. Dip each slice of bread into the egg mixture to coat completely, then place in the skillet. Cook until golden and slightly crispy— about 2 minutes per side. We recommend serving with a sprinkle of cinnamon sugar, a tablespoon of mascarpone and a few additional banana slices. Simply to die for!
