Vancouver’s celebrated West to create his own brand of contemporary Canadian cuisine that showcases locally sourced, organic, Ocean Wise certified and sustainable ingredients. Dungeness crab benedict and sablefish frittata star on the breakfast menu, while the lunch menu features fried Maple Hills chicken and confit pork shoulder. Luxe lobby lounge 1927 serves classic cock- tails and casual fare while the bustling Bel Café offers exquisite pastries and macarons, gourmet sandwiches, spe- cialty coffees and artisan teas. Serving light dishes and cocktails, Reflections Lounge is an outdoor oasis featuring water features, teak chairs and a fire pit. Prohibition, set to open in 2012, is a sophisticated subterranean jazz lounge that will pay homage to the ho- tel’s 1920s roots through live entertainment.


Sense, A Rosewood Spa®, welcomes guests with an extensive offering of treatments that draw on local healing traditions and ingredi- ents. Among the fine skincare products used at the spa is Ancient Secret, a Vancouver-based line made with glacial clay and Pacific seaweed extracts. Sense’s signa- ture treatment, the Vancouver Signature Sensation, exfoliates dry skin with Sense’s pep- permint and herb-infused sea salt, which provides the feel of a cool glacial breeze and the aroma of fresh mountain air. Little ones, meanwhile,


can enjoy the Rose Buds spa menu. Te spa space also features a state-of-the-art fitness centre—complete with personal trainers—and a spectacular 52 foot indoor saltwater lap pool that is artfully illuminated from below.


Home to one of the country’s largest private collections of Canadian art, the Rosewood Hotel Georgia showcases the works of both masters and emerging artists. Te collection of over 200 almost exclusively Canadian works—which includes pieces by artists such as Douglas Coupland, Alan Wood, Ray Natraoro, Brent Comber and Takao Tanabe— also features two paintings by British artist Patrick Hughes. Hughes’ ‘reverspective’-style Internity, displayed in the lobby, draws viewers in with its eye-catching three- dimensional design.
