Recipe Lamb Racks
T
his is a simple and delicious lamb recipe! Lamb is at its best when it's served unadultured with sauces that
overwhelm the naturally rich fl avours of the meat. Real Irish lamb is a delicacy in its own right and should only be lightly seasoned. This recipe for lamb racks is easy to prepare and can be presented in true gourmet style or simply served at an evening meal with the family.
Ingredients • Rack of Lamb (4 Irish Cutlets) • Salt and pepper • A Whole Lime, inc the zesty peal • Garlic, fi nely dice • Dash of Olive Oil
Lamb Dressing • Fresh Basil Leaves • 2 Cloves Garlic, fi nely diced
Cooking Lamb Racks Again with any dishes requiring a marinade the secret is preparation. Baste the lamb cutlets well in advance giving
the lime and garlic time to permeate into the meat. If you are in a rush 20 minutes preparation time is acceptable but with such dishes you get out what you put in and in this regard we recommend marinating the lamb hours in advance The lamb should be placed in a bowl
with the seasoning juices of the lime. We recommend rubbing the garlic into each cutlet individually for best results. Pan fry the lamb cutlets on a piping
hot grill for approx seven minutes, turning half way through Serve the cutlets of
lamb with hand cuts chips or spicy potato wedges.
