o spring is finally elbowing winter aside, sprinkling daffodils throughout the land as she comes. Heavy coats are being replaced by lighter


and the meal we ate featured a fresh herb and citrus combination of lemon and thyme.


As I sat there munching away, I thought


to myself ‘what this needs is vodka’. Vodka? Yes, but not any old vodka.

made in the UK, and this vodka is great. Back in the Speakeasy, I got to messing


about with these flavours – and was rewarded for my effort. And so, as my welcome to spring, I give


you the recipe for the cocktail A Chase Through Thyme.


A Chase Through


Thyme Ingredients 35ml Chase Vodka 25ml cloudy apple juice 12.5ml white peach liquor 3 sprigs of thyme (1 of which to garnish) Zest of half a lemon (put a few strands to one side for garnish) Small bottle of sparkling elderflower presse


Method Rub the lemon zest and thyme together between your fingers to infuse before placing in the cocktail shaker. Add in the vodka, apple juice and peach liquor. Put on the lid and shake well. Strain into a tall glass filled three quarters full with crushed ice. Top up the glass with the elderflower presse and crown with ice. Garnish with a sprig of thyme and the remaining lemon zest. EL
