◆16 raw large prawns,peeled and deveined withtails left on ◆Twoegg whites ◆Fourtbsp toasted sesame seeds ◆Cookingoil spray ◆Saltand pepper ◆Thinly sliced spring onion, to serve


INGREDIENTS


For the Chilli DippingSauce: ◆200ml ricewine vinegar ◆100gcaster sugar ◆Twotbsp chilli flakes ◆One shallot, thinly sliced ◆Salt

Preheat the ovento200C/Gas mark six.


To make the sticky Chilli Dipping Sauce, heatthe vinegar and sugar with alarge pinch of saltinasaucepan over medium


heat.

Bring to the boil, thensimmer for five min- utesoruntil syrupy.


Remove from the heatand add the chilli flakes.Set aside until cool, then add the shallot.


Butterfly the prawns by making adeep cut downthe back so they lay nearly flat.


Whisk the egg white until justfoamy,then dip the prawns in, allowing any excess egg white to drain off.


Season withsea salt and freshly ground black pepper,then roll in the sesame seeds.


Place on abaking tray,spray with abit of oil and bakefor five minutes, or until they turnopaque and start to curl.


Serve warm, garnished withthe spring onion, withthe dipping sauce on the side.
