Raspberry and Banana Bake with Crunchy Topping
These quick-fix and economical recipes are just the job for those colder spring days or evenings. Cooking times are based on equipment and ingredients being brought out so you can go for it as efficiently as possible!
Cream of Tomato Soup v r Three Course v 4 Cream of Tomato Soup
30 minutes including preparation time A rich creamy soup that does it dairy-free!
Oil spray OR 1 tsp olive oil 1 onion 3 cloves of garlic 2 medium sweet potatoes, peeled and chopped into medium-small chunks
2 tins of plum tomatoes 250ml/9fl oz water 1-2 tsp vegan bouillon powder or 2 Green Oxo A handful of fresh basil, OR ½ tsp dried basil 1 or 2 handfuls of cashew nuts, ground fine OR 2 tbsp cashew butter, eg Meridian brand
Sea salt Black pepper
1 Sauté the onion until it starts to soften. Add garlic and sweet potato pieces. Sauté for another 2-3 minutes, adding a little water to stop it sticking if necessary. 2 Add the tomatoes and water plus bouillon to the saucepan. If using Green Oxo, crumble them. Add the herbs. 3 Bring to the boil then reduce heat and simmer for 10-15 minutes or until the sweet potatoes are soft. 4 Blend soup, adding the ground nuts or nut butter. Bring to the boil and add a little more stock if it is too thick. Taste for seasoning, adding salt if desired.

Banana Bake with Crunchy Topping
40 minutes, most of it baking time This makes a lovely alternative to the usual fruit crumble. The contrast of raspberries and banana work well together.
1 pack frozen raspberries (about 350g) 3 bananas, sliced Brown sugar or agave syrup to taste 150g/5oz fresh white or wholemeal breadcrumbs 2 tbsp vegan margarine 4 tbsp dark brown sugar Vegan ice cream to serve – Swedish Glace, Tofutti or Booja Booja
1 Preheat oven to 180°C/350°F/Gas Mark 4. 2 Lightly grease an oven-proof dish. 3 Mix the margarine, brown sugar and breadcrumbs together. 4 Put the raspberries and bananas into the pie dish, adding sweetener to taste. 5 Cover with the breadcrumb mixture and bake for 20- 30 minutes. 6 Serve hot with the ice cream.
