Blackened Red Snapper Serves 4
4 (4-ounce) red snapper fillets (skinless) 2 tablespoons blackened redfish seasoning 1½ tablespoons olive oil
Lightly brush fish with seasoning. Heat the oil in a sauté pan over medium-high heat. Add the snapper to the pan and cook until done (about 2½ minutes each side).
Note: Tis is also a good way to prepare catfish.
Grilled Chicken Breast with Basil Pesto Serves 4
4 (4-ounce) chicken breasts Salt and pepper 4 tablespoons prepared basil pesto
Season chicken with salt and pepper. Cook on preheated outdoor grill
on high or in sauté pan with a little oil over medium-high heat until done (juices should run clear when meat is pierced). Top each breast with 1 tablespoon pesto and serve.
