Insalata Caprese Serves 1
2 cups spring mix salad greens 1 tomato, sliced 2 ounces fresh mozzarella, thinly sliced ¼ cup fresh basil leaves, chopped Vinaigrette Dressing (see recipe on opposite page)
Layer greens on a plate. In a circular design, alternate tomato slices with mozzarella slices, overlapping for effect. Sprinkle basil liberally over the slices. Top with Vinaigrette Dressing.
Greek Salad with Vinaigrette Serves 1
6 ounces romaine lettuce (two handfuls) 1 slice red onion, broken into rings ½ tomato, cut into wedges 2 tablespoons crumbled feta cheese 4 artichoke heart quarters 6 slices cucumber 2 pepperoncini peppers 6 kalamata olives 2 tablespoons Vinaigrette Dressing (see recipe on opposite page)
Place lettuce on a large plate and top with remaining ingredients.
