International Chef Exchange:


The Beaumont at Drakes Wednesday 4 April 2012, from 7pm


Drakes hosts the festival’s first ever International Chef Exchange and welcomes Chef Audrey Eussen of the Beaumont restaurant and hotel in Maasticht. For one night, Audrey will take the reins from Andrew MacKenzie in the Drakes kitchen and produce a five course menu using a combination of local produce she has sourced from Sussex producers, combined with some Dutch ingredients, and of course, her own unique flair.


During her week with us, Audrey will be visiting some local producers including Harveys Brewery and Ridgeview Winery to discover some of Sussex’s famed food and drink. You can also see Audrey and Andrew cook together on the Live Food Show stage on Friday 6 April.

Audrey Eussen International Chef Exchange


Food writer and festival committee member Andrew Kay is getting very excited about the upcoming visit of Chef Audrey Eussen from Maastrcht and the return match of Andrew MacKenzie of Drakes.


A recent post on Facebook described what I do as food porn. I was flattered. Sixteen years writing about food and drink have given me a somewhat heightened attitude to what I eat and as my regular readers will know, I can become very excited about food, very excited indeed!


Last year I made a trip to Maastricht in the Netherlands where I was introduced to Chef Audrey Eussen at the delightful Beaumont Hotel. Audrey cooked a many coursed dinner for me of such delights that I was completely thrilled. I wanted to share that experience and I wanted to share it in more than my usual verbal way.


There and then the idea of International Chef Exchange was born. But ideas can easily die away if they are not fed and watered. I have been very lucky that everyone that I have asked to join in with this project has become as excited as I am, and what was once an idea is now a reality.


for a similar experience culminating in a ‘Drakes’ dinner where he will introduce his style of cooking and Sussex produce to the people of that food-loving city. Dutch cuisine may not get much exposure outside the Netherlands but Maastricht boasts a total of six Michelin stars across its many fine restaurants, testament to the quality of food on offer there.

Six months on I am thrilled to say that Audrey will be here in Brighton for the Spring Harvest as the first participant in our exciting new International Chef Exchange project.


Whilst here she will be visiting food and drink producers, sampling the best that Sussex has to offer and cooking a delicious ‘Beaumont’ dinner at Drakes hotel and restaurant. Finally, on Good Friday, she will join me at the Live Food Show, this year in the Corn Exchange, where she will demonstrate dishes from her amazing repertoire.


Whilst at Drakes she will be in the more than competent hands of Chef Andrew MacKenzie, and two months later Andrew will travel to Maastricht and join Audrey in her kitchen

Audrey is a remarkably inventive young chef. Her food reflects her passion for local, seasonal ingredients and she employs a combination of classic culinary techniques and ideas with modern a modern twist. At Beaumont Hotel she has a brigade of chefs lead by women in a kitchen which is open to the dining room. At Drakes she will work with Andrew, sharing ideas and experiences and bringing to the table a meal that I am sure will make people want to visit Maastricht and the Beaumont Hotel.


In return Andrew will be following a similar path when he joins Audrey in the summer and prepares for the Beaumont a taste of what Drakes has become so well known for, which is great seasonal food cooked with precision and style.


International Chef Exchange is a chance to share what is best for both the chefs and for the diners too. It is a chance for us to see what is happening in the culinary world beyond our shores and also for us to show that world what a great food offer Brighton & Hove and surrounding Sussex has to offer – from seafood to wines – and of course, restaurants.


My excitement at this project is matched by the owners and teams at both Drakes and Beaumont Hotel and I hope that you will want to join in that excitement when these two future stars of the culinary world swap kitchens for a week.
