Pheasant plucking, venison sausages and the “lamboughini of BBQs”. Mark Butler got well and truly hands-on with a Game butchery course at the Ilkley Moor Vaults - which is hosting entertaining, educational food nights with the award-winning David Lishman.

he moment I walked through the door at the Ilkley Moor Vaults on a frosty January night, I could tell I was in for a bit of a


treat. It might have been the glass of sloe gin and slice of Game pie that was pressed into my hands upon arrival. It may have been the impressive-looking BBQ that I passed on the way in. But as soon as the itinerary for the evening’s Fur And Feather course was detailed, it became clear it was going to be a very enjoyable few hours indeed. Renowned butcher David Lishman was there to talk us through the preparation of pheasant, duck, partridge, woodcock, snipe, rabbit, and even a squirrel – while Vaults owner and


- was waiting to serve us up some further Gamey treats. To begin with, we were taken outside under


cover and near the welcome warmth of said BBQ, where David soon had us removing the feathers from our birds. Now, I’m not a pheasant plucker. I’m not even a pheasant plucker’s son. So, slightly daunted by the larger birds, I ended up with a rather more manageable woodcock in my hands. The de- feathering got into full-swing, and before long it’s fair to say – to our amusement – that we all looked as though we’d been in some kind of insane pillow fight. Duly plucked, the birds then had to be taken inside and gutted, which David demonstrated before letting us have a go ourselves. It really wasn’t as difficult as I’d feared (though the squeamish need not apply) and before long we all had a beautifully-presented bird ready to take home. After that, Joe treated us to delicious pan-fried cuts of all the relevant meats, before Andy brought in a platter of


chef Joe McDermott would be cooking up the resulting cuts. That’s before we were even introduced to the presence of three-time British BBQ champion Andy Annat, whose mighty Primo kit – dubbed the “lamboughini of BBQs”

unbelievably tender, tasty smoked pheasant and an equally delightful rack of venison to try. Then, under expert guidance, we made and


linked our very own batch of venison and pork sausages (again, ready to take home at the end


of the night), and Joe rustled up a couple of fantastic dishes using some of the night’s best meat – talking us through the process – which we enjoyed downstairs with a glass of wine. Held in a friendly, informal atmosphere but with plenty of tips and expert advice into the bargain, the aim of showing us how to make the most of the region’s top Game was certainly achieved. The Vaults’ Cook School began in January in


partnership with David, and further butchery, charcuterie & game classes are planned going forward. Whether you’re a complete amateur looking to broaden your culinary horizons, or a keen chef or foodie after some great hands-on guidance – I can certainly recommend them. Upcoming classes include Sausage Making & Bacon Curing on Saturday 10th March and Charcuterie on Saturday 24th March, both priced at £125 per person.
